This organ is a very lean muscle rich in B12 and iron which plays an essential role in the transport of oxygen in the blood and in the formation of red blood cells. Iron also plays a large role in the development of new cells and hormones.
We suggest braising it in beef stock or cutting it into chunks and then adding it to a stew, two of which are fantastic ways to use this nutrient-dense organ!
